Cream cheese doesn’t have to be expensive anymore with this recipe to make your own cream cheese from the comfort of your kitchen.

When it comes to the ingredients, you’ll need two cups of heavy cream, the same quantity for whole milk, 1 drop liquid vegetable rennet (after dissolving it in two tbs of water), 1/8 tsp (one packet) mesophilic starter culture (you can replace it with one ounce of buttermilk), ¼ tsp of salt or other flavorings (optional).

For preparation, mix milk and cream in a pot and put them over heat until they reach 75°F while making sure to stir the mixture. After taking the pot off the heat, add buttermilk (you also have the option to sprinkle the mesophilic starter culture on the milk and give it around 2 min dissolve).

Then, slowly stir and put the rennet. You’ll need to use the spoon in an up-and-down movement just below the surface of the mixture to guarantee it will be even.

Put a cover over the pot and roll it with kitchen towels, then place it in a place with a temperature between (70°F-75°F) to incubate, and keep it that way for 14 h. Use a muslin to drain it over a bowl for a period of 7 to 10 hours, and then put it in a refrigerator (You may add the salt or flavoring before that)
